Baby Apple Oat Muffins (no added sugar)

These Baby Apple Oat Muffins are yummy little baked oatmeal cakes that are a perfect snack or healthy breakfast for the whole family. With no added sugar, they are still naturally sweet enough thanks to fruit. They’re great for Baby Led Weaning (BLW), lunch boxes and as a grab-and-go breakfast for little and big people!

Great for a grab-and-go breakfast!

I started making these apple oat cakes when Baby LJ decided he was sick of the standard breakfast fare, turning his nose up at yoghurt and cereal. Not wanting to give him peanut butter toast every morning (I’m a firm believer in variety to expose my little people to different tastes and textures), I tried these and success! He loved them!

The rest of the family, me included, did too and they’ve become a great grab-and-go breakfast option. Keep a stash in the freezer for busy mornings and just warm in the microwave. You can do the same with these Banana Oat Muffins too!


Ingredients in Apple Oat Muffins

You’ll need the following ingredients to make these baby oat muffins:

Apple – Choose sweet red or pink varieties of apples, like Pink Lady, Fuji, Royal Gala, Red Delicious or similar.

Pitted dates – A great alternative to refined sugar! I always use pitted dates, rather than Medjool dates, because I keep a stockpile in my pantry. You can substitute if you like, but be sure to remove the pit.

Rolled oats – Oats are such a nutritious whole grain (one of the healthiest!) and filling too, making them a great breakfast or snack option.

Milk – I use full-cream milk, but you can try these with your preferred variety if you like. Let me know how it goes!

Egg – For binding.

Cinnamon – For a yummy flavour.

Baking powder – The raising agent.

How to make Apple Oat Muffins

Cook the apple and dates on the stovetop until tender, to bring out the flavour and soften the dates. Then add to a blender with the remaining ingredients, and mix. Transfer the blended mixture to a mini muffin tray. Bake the oat cakes for just 15 minutes in the oven, and they’re ready to eat!

Thermomixer? These apple oat cakes are really easy to prepare in a Thermomix/thermo cooker. Chop the apples and then cook with the dates in your machine to soften and bring out the flavours. Add the remaining ingredients and mix. Transfer the blended mixture to a mini muffin tray, and bake the oat cakes for just 15 minutes in the oven.

Serving and storing

These are best served warm, so if not freshly out of the oven then just reheat for a few seconds in the microwave.

Store the muffins in an airtight container in the refrigerator for up to 3 days, or freezer for up to 3 months. To defrost, thaw in the refrigerator. These apple oat cakes have such a moist texture, that I don’t recommend keeping them stored at room temperature for any length of time.

These Baby Apple Oat Muffins are yummy little baked oatmeal cakes that are a perfect snack or healthy breakfast for the whole family. Ingredients 

  • 15 g pitted dates (approx. 3 dates)
  • 1 tbs water
  • 2 small red apples peeled, cored and roughly chopped (approx. 180g) (Note 1)
  • 120 g rolled oats
  • 80 g milk
  • 1 egg
  • 1 1/2 tsp cinnamon ground or powder
  • 1/2 tsp baking powder

Instructions

  • Preheat oven to 180°C. Line a miniature muffin tray with patty pans or lightly grease (Note 2).
  • On the stovetop over medium heat, cook the apple, pitted dates and water for 4 to 5 minutes until soft.
  • Transfer to a food processor or blender, and add all remaining ingredients. Blend until just combined.
  • Pour mixture into prepared miniature muffin tray and bake for 15 minutes.

Thermomix Instructions

  • Preheat oven to 180°C. Line a miniature muffin tray with patty pans or lightly grease (Note 2).
  • Put apple into the mixing bowl and chop 3 seconds, speed 5, MC on. Scrape down the mixing bowl.
  • Add dates and water. Cook 4 minutes, 90°C, speed 2, MC on. Scrape down the mixing bowl.
  • Add remaining ingredients and mix for 10 seconds, speed 5, MC on.
  • Pour mixture into prepared miniature muffin tray and bake for 15 minutes.

Recipe Notes

1. Apples – Use sweet red or pink varieties of apples, like Pink Lady, Fuji, Royal Gala or Red Delicious. Avoid using green apples, unless you like their tartness.
2. Muffin tray – I use a silicone tray, which doesn’t require greasing.
3. Storage – Store in an airtight container in the fridge for up to 3 days or freezer for up to 3 months.
4. Nutrition – Per individual piece, as a general guide only.
