Apple, Pumpkin and Sweet Corn Purée

This Apple, Pumpkin and Sweet Corn Purée is a versatile purée for when baby starts solid food! This baby food is deliciously sweet and bright, and can be served warm or cold. It’s perfect in reusable pouches for a meal on the run.

Ingredients 

  • 1 apple peeled and roughly chopped (approx. 170g) (Note 1)
  • 110 g pumpkin peeled and chopped into 3cm/1 inch cubes
  • 60 g frozen sweet corn
  • 500 g water

Thermo Cooker Instructions

  • Put the apple, pumpkin and sweet corn into the simmering basket.
  • Pour the water into the mixing bowl. Insert the simmering basket and cook for 12 minutes, Varoma, speed 2, MC on.
  • Remove the simmering basket. Reserve the liquid in a jug.
  • Put the apple, pumpkin and sweet corn and 30g (2tbs) reserved water into the mixing bowl. Chop for 1 minute, speed 7, MC on, making sure to increase the speed gradually to avoid the fruit and vegetables immediately sticking to the sides of the mixing bowl. See Note 2 on consistency.

Conventional Instructions

  1. Steam the apple, pumpkin and sweet corn using a steamer basket over a saucepan/pot with lid for 12 minutes or until apple and pumpkin are tender. Remove from the heat. Reserve the water used for steaming.
  2. Blend the fruit and vegetables with 30g (2 tbs) of reserved water, using a food processor or electric hand blender, until you are happy with the consistency (Note 2).

Recipe Notes

1. Apples – Use sweet red or pink varieties of apples, like Pink Lady, Fuji, Royal Gala or Red Delicious.
2. Consistency– Depending on baby’s age and stage, you can adapt this easily to suit your baby’s needs. First tastes/early weaning? Add a little cooled boiled water, formula milk or expressed breastmilk immediately before serving to make a runnier purée. Later weaning? Make this as textured/mashed as you like by reducing the amount of reserved cooking liquid you add, and reducing the chopping time and speed in Step 4 (Thermo Cooker Instructions) or Step 2 (Conventional Instructions).
3. Storage – Store in an airtight container in the fridge for up to 2 days or freezer for up to 1 month. Be sure to practice food safety [2] when storing, defrosting and/or reheating baby food. For freezing individual portions, use baby food/ice-cube trays. If using frozen food, defrost overnight in fridge and then reheat to steaming hot. Allow to cool before serving.
