Zucchini and Tomato Puree

This Zucchini and Tomato Puree is a lovely baby food to introduce when first starting solids. Zucchini (courgette) has a light, delicate flavour which is ideal for pairing with other vegetables, including tomato. These juicy vegetables have a high water content, and so puree brilliantly without the need to add anything else to this homemade baby food.

You may have heard to only give baby tomatoes later into starting solid foods, because it can cause skin reactions [1]. As with any new foods there are precautions, but tomatoes can be introduced from when baby starts solids [1,2]Tomatoes [2] are packed with Vitamin C and antioxidants. Zucchini [3] is rich Vitamin C too, as well as beta-carotene (which is converted to Vitamin A). It contains other important vitamins and minerals that support baby’s growth [3].

With these vegetables common in many family meals (in ours at least!), it made sense to introduce this tomato and zucchini puree to Baby LJ sooner rather than later.


Ingredients for Zucchini and Tomato Puree

This tomato and zucchini baby food has just three ingredients:

Zucchini – There is no need to peel the zucchini, but wash it thoroughly and remove the ends.

Tomato – I normally use one large ripe Gourmet tomato, but Field or Roma varieties work too. Choose the best looking produce for baby!

Butter – Use unsalted butter, to avoid giving baby unnecessary sodium.

Water – For steaming the vegetables.

How to make this baby puree recipe

Thermomixer? Easily make this baby food in your all-in-one appliance. First, steam the zucchini in your thermo cooker. Skin and deseed the tomato. Once the zucchini is done, sauté the tomato with butter in the thermo cooker. Add the zucchini and blend to the consistency best for baby. 

Conventional cook? Still easy! Using a steamer basket on the stovetop, steam the zucchini. Skin and deseed the tomato. Once the zucchini is done, sauté the tomato with butter on the stovetop. Transfer the tomato to a food processor or blender, add the zucchini and blend to the consistency best for baby.

How to serve Zucchini and Tomato Puree

This Zucchini and Tomato Puree is a great baby food recipe, because of it’s versatility. Serve it runny for baby early into starting first foods, or chunkier when moving to more textured food. It makes a nice delicate pasta sauce too for self-feeding, or can be mixed with a range of other mashed vegetables.

Storing this zucchini and tomato baby food

This homemade puree can be stored in an airtight container in the fridge for up to 2 days. It can also be frozen. It’s a good idea to use baby food freezer trays/ice cube trays for freezing individual portions, so that you have them available at the ready. Remember to be food safe when freezing, defrosting and reheating baby’s food.

This Zucchini and Tomato Puree is a lovely baby food to introduce when first starting solids. Zucchini (courgette) has a light, delicate flavour which is ideal for pairing with other vegetables, including tomato. These juicy vegetables have a high water content, and so puree brilliantly without the need to add anything else to this homemade baby food.

Ingredients 

  • 500 g water
  • 200 g / 1 medium zucchini/courgette
  • 130 g / 1 large ripe tomato
  • 10 g unsalted butter (Note 1)

Instructions

  • Steam the zucchini in a steamer basket over a saucepan/pot with lid for 12 minutes or until zucchini is tender.
  • While steaming the zucchini, prepare the tomato. Using a sharp knife, carefully cut a cross into the skin of the tomato at its base. Plunge it into boiling water for 1 minute. Transfer to cold water. Peel, deseed and roughly chop.
  • Heat the butter in a saucepan, and sauté the tomato for 7 minutes until tender.
  • Transfer to a blender or food processor. Add the steamed zucchini. Blend the vegetables until you are happy with the consistency (Note 2).

Thermomix Instructions

  • Pour the water into the mixing bowl. Insert the simmering basket. Add the zucchini to the basket and cook for 10-12 minutes, Varoma, speed 2, MC on.
  • While steaming the zucchini, prepare the tomato. Using a sharp knife, carefully cut a cross into the skin of each tomato at its base. Plunge them into boiling water for 1 minute. Transfer to cold water. Peel, deseed and roughly chop.
  • Remove the simmering basket. Discard the liquid and return mixing bowl to base. Add the tomato and butter. Sauté for 7 minutes, 100°C, speed 1, MC off.
  • Add the steamed zucchini. Chop for 30 seconds, speed 7, MC on, making sure to increase the speed gradually to avoid the vegetables immediately sticking to the sides of the mixing bowl. See Note 2 on consistency.

Recipe Notes

1. Butter – Use unsalted butter, to avoid giving baby unnecessary sodium.
2. Consistency – Depending on baby’s age and stage, you can adapt this easily to suit your baby’s needs. First tastes/early weaning? Add a little cooled boiled water, formula milk or expressed breastmilk immediately before serving to make a runnier puree. Later weaning/older babies? Make this as textured/mashed as you like by reducing the chopping time and speed in Step 4.
3. Storage – Store in an airtight container in the fridge for up to 2 days or freezer for up to 1 month. Be sure to practice food safety [4] when storing, defrosting and/or reheating baby food. If using frozen food, defrost overnight in fridge and then reheat to steaming hot. Allow to cool to room temperature before serving.
