Baby Sweetcorn Fritters

These Baby Sweetcorn Fritters are a yummy and wholesome breakfast, lunch or snack idea. Golden, cheesy and naturally sweet, they’re a great finger food for babies and toddlers, and are just as appealing to older children and grown-ups too! With simple ingredients and two easy steps, you’ll be making these on repeat.

Sweetcorn Fritters for Baby Led Weaning

Fritters are such a great food for Baby Led Weaning (BLW). They hold together well, are easy to grip, and you can sneak in veggies (like corn and spring onion) without fuss.

These sweetcorn fritters are soft, cheesy and easy to chew – the corn is blended to reduce the risk of it being a choking hazard. This makes them suitable from around 6 months of age, when baby is developmentally ready for solids.

Plus, they freeze really well – so you can batch cook and have a baby-friendly lunch or snack ready to go.


Ingredients in Baby Sweetcorn Fritters

You’ll need just a few simple pantry and fridge ingredients to make these nourishing baby corn fritters:

Canned corn kernels – Look for canned sweetcorn with no added salt. Drain well before using. You could also use defrosted frozen corn or freshly steamed corn off the cob. But I love canned corn for the ease of it!

Spring onion – Adds a mild flavour boost without overpowering baby’s palate. Chop it finely for even distribution.

Egg – Helps bind the fritters.

Garlic powder – For a subtle flavour. If making these for adults too, feel free to add a little more!

Salt (optional) – A small amount of salt (¼ tsp) is included, but only if serving to family members over 12 months. Leave it out if cooking for babies.

Wholemeal/whole wheat flour – Helps give the fritters structure. You can substitute with plain flour if needed, I just always prefer to use the least-processed variety.

Milk – Just a splash helps create the batter consistency. Use full-fat milk for babies under 2 [1].

Cheddar cheese – Grated cheddar cheese adds flavour and helps the fritters brown nicely in the pan. Cheddar adds great flavour, but Mozzarella is a good lower-sodium alternative when cooking for babies.

Oil – A small amount of olive oil for pan frying.

How to make Baby Sweetcorn Fritters

Making these corn fritters is as easy as mix, fry, serve!

Step 1: Put the drained corn, chopped spring onions, egg, garlic powder, salt (if using), flour, milk and grated cheese into a food processor. Blitz it until well chopped but not super smooth – I like to keep just a bit of texture without the corn kernels being too large for young children.

Step 2: Heat a little oil in a nonstick frying pan over medium heat. Scoop the batter into the pan using a 1/4 cup measure or large spoon. I find doing batches of 3 the easiest to flip, as there’s more room in the pan. Cook for 2–3 minutes on each side, flattening them slightly when you flip them to make sure they cook evenly. Transfer the cooked fritters onto a tray lined with paper towel, while you continue with the remaining batter.

Step 3: Allow the fritters to cool if serving to young children.

Thermomixer? Add corn kernels, spring onion, egg, garlic powder, salt (if using), flour, milk and cheese to the Thermomix mixing bowl. Chop until the corn is finely chopped but not super smooth. Heat oil in a nonstick frying pan over medium heat. Scoop the batter into the pan using a 1/4 cup measure or large spoon. I find doing batches of 3 the easiest to flip. Cook for 2–3 minutes on each side, flattening them slightly when you flip them to make sure they cook evenly. Transfer the cooked fritters onto a tray lined with paper towel, while you continue with the remaining batter. Cool before serving.


Serving

These fritters are ideal for BLW – just serve them whole, halved or chopped into fingers depending on your baby’s age and developmental stage. 

For older toddlers and kids, serve with:

  • A dollop of plain yoghurt or baby-friendly hummus.
  • Sliced avocado or tomato.
  • A side of fruit for a complete snack or light meal. 

And for teens/adults in the family, with a fried egg on top – my breakfast favourite!

You can also pack them into lunch boxes or serve them cold at picnics and playdates.

Storing Baby Corn Fritters

Store cooled corn fritters in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months. 

When freezing, lay the fritters out on a lined tray (not stacked). Once frozen, transfer to an airtight container or ziplock bag. Label it! 😁

From defrosted, reheat in a dry frying pan until warmed through. Always check they’re soft and not too hot before serving to baby.

  • 420 g can corn kernels no-salt variety, drained (Note 1)
  • 2 spring onions finely chopped (approx. 2 tbs)
  • 1 egg
  • 1/4 tsp garlic powder
  • 1/4 tsp salt for family over 12 months
  • 1/3 cup wholemeal/whole wheat flour (50g)
  • 2 tbs milk
  • 1/2 cup cheddar cheese grated (35g) (Note 2)
  • 1 tbs oil for cooking

Instructions

  • Put 420 g can corn kernels, 2 spring onions, 1 egg, 1/4 tsp garlic powder, 1/4 tsp salt, 1/3 cup wholemeal/whole wheat flour, 2 tbs milk and 1/2 cup cheddar cheese into a food processor. Blitz until well chopped but not smooth.

  • Put 420 g can corn kernels, 2 spring onions, 1 egg, 1/4 tsp garlic powder, 1/4 tsp salt, 1/3 cup wholemeal/whole wheat flour, 2 tbs milk and 1/2 cup cheddar cheese into the mixing bowl. Chop for 8 seconds, speed 5, MC on until well chopped but not smooth.
  • In a frying pan over medium heat, heat 1 tbs oil. Place batter into the pan using a large spoon or 1/4 cup measure. Cook fritters in batches of 3 or 4, for 2-3 minutes on each side until golden. When you flip the fritter, press down gently with your spatula to ensure even cooking. Transfer cooked fritters onto a tray lined with paper towel. Continue with the remaining batter.
  • Allow to cool if serving to young children. Serve either whole or chopped into fingers.

Recipe Notes

1. Corn – One can, drained and reduced to 250g/9oz or 1 1/2 cups corn. If you substitute with frozen corn, allow it to defrost first before mixing with the other ingredients.
2. Cheese – I always grate my own cheese (pre-shredded cheese has anti-caking agents). I like to use cheddar cheese in this recipe for toddlers. Mozzarella is a great lower sodium option for babies.
3. Storage – Store in an airtight container in the fridge for up to 3 days or freezer for 3 months. Be sure to practice food safety when storing, defrosting and/or reheating baby food.
