Chocolate Peanut Butter Slice

This delicious Chocolate Peanut Butter Slice is so quick and easy to make, and very moreish! Is there anything better that the combination of dark chocolate and roasted peanuts? Made from just 6 ingredients and done in about 5 minutes, the hardest part of this no-bake slice recipe is waiting for the slice to chill for 10 minutes or so before eating it! It’s an easy dessert to make, and perfect treat!

In our household, we try to maintain a healthy and balanced diet. What does that look like? I always encourage my children to eat fruit, vegetables, dairy, protein and grains first, but yes they occasionally eat treats. Lots of homemade treats I make are refined-sugar free (like these Cacao Chocolate Bliss Balls or Sultana Cookies), but others not. And that’s okay! I’m of the opinion that most foods are fine, in moderation, and teaching this to my children is a part of helping them to develop healthy eating habits.

This Chocolate Peanut Butter Slice does sit in the ‘treat’ category, but I think it is healthier than store-bought slices, chocolates and candy bars! The base of this slice has no refined sugar. It’s made from just a few ingredients including peanuts, Medjool dates and coconut. Peanuts are a great plant-based source of protein, are high in healthy fats and fibre, and rich in vitamins and minerals. Dates are also full of essential vitamins and minerals including B-vitamins and calcium. They are a natural source of fibre, aiding digestion and a feeling of fullness. Dates are considered healthy, in moderation. They are high in naturally occurring sugar, so are considered a treat and best for children over 18 months old.

What you need to make Chocolate Peanut Butter Slice

A simple ingredients list is needed to make this delicious no-bake slice recipe:

Peanuts – Be sure to use unsalted roasted peanuts. The type of peanuts used is really important to the final taste, trust me. I’ve made it with blanched/boiled peanuts and it’s no good!

Medjool dates – Pitted! Buying fresh whole medjool dates and pitting them yourself is more economical, and easy to do. You can normally find them refrigerated in the fruit and vegetable section of the supermarket.

Coconut – Desicated. If you have shredded coconut, simply process it in the thermo cooker or food processor before beginning the recipe.

Vanilla paste – I use vanilla paste. It has a slightly stronger taste than extract, but you can substitute it if you need.

Salt – Just a small amount to offset the sweetness of the dates and enhance flavour.

Dark chocolate – The bitterness of the dark chocolate topping pairs perfectly with the peanut base. If you prefer it, you can use milk chocolate instead. I buy the baking melts, which are chocolate buttons that are easy to melt and set at room temperature.

How to make this easy slice recipe

This no-bake slice recipe is so quick and easy! In a thermo cooker or food processor, blitz the dates with a small amount of water to soften them. Add the remaining base ingredients and blitz until crumb-like. Press it into a slice tin and flatten into an even layer, before melting and pouring over the melted chocolate. Give it a few minutes to set, slice it and chill for 10 minutes, then enjoy!

Thermomixers: If you normally melt chocolate in your Thermomix, then by all means do so. I just find it easier to do it in the microwave or in a bowl over a pot of water on the stove.

How to store this slice

Chocolate Peanut Butter Slice needs to be stored in an airtight container in the refrigerator. It will keep for 3 to 5 days, if you can exercise enough will power to not eat it sooner.

It's an easy dessert to make, and perfect treat!

Ingredients 

  • 270 g / 2 cups Medjool dates pitted (Note 1)
  • 3 tbs water hot
  • 280 g / 1 3/4 cups roasted peanuts unsalted
  • 60 g / 2/3 cup desiccated coconut
  • 1 1/2 tsp vanilla paste
  • 1/2 tsp salt
  • 200 g / 1 cup dark chocolate melts

Thermo Cooker Instructions

  • Put the dates and water into the mixing bowl. Chop for 20 seconds, speed 5, MC on. Scrape down the mixing bowl. Repeat.
  • Add the peanuts. Chop for 20 seconds, speed 5, MC on. Scrape down the mixing bowl. Repeat.
  • Add the coconut, vanilla paste and salt. Chop for 10 seconds, speed 7, MC on. Scrape down the mixing bowl and agitate if needed. Repeat twice.
  • Transfer mixture to slice tray lined with baking paper or parchment paper, and press to flatten.
  • Using your preferred method and following packet instructions, melt the chocolate. Pour and spread evenly over the slice. Allow to cool.
  • Once set, remove from the tray. Using a hot sharp knife, slice into 20 pieces. Transfer to the refrigerator to store. Best served chilled!

Conventional Instructions

  1. Using a food processor, blitz the dates and water together until finely chopped.
  2. Add the peanuts. Blitz again until finely chopped.
  3. Add the coconut, vanilla paste and salt. Blitz until well combined.
  4. Transfer mixture to slice tray lined with baking paper or parchment paper, and press to flatten.
  5. Using your preferred method and following packet instructions, melt the chocolate. Pour and spread evenly over the slice. Allow to cool.
  6. Once set, remove from the tray. Using a hot sharp knife, slice into 20 pieces. Transfer to the refrigerator to store. Best served chilled!
