These Chocolate Peanut Butter Rice Crispy Bars are the ultimate no-bake treat! Crunchy puffed rice, rich dark chocolate and nutty peanut butter come together in one seriously satisfying bite. They’re sweet enough to feel like a treat, but not so sugary that you’ll hesitate to pop one in a lunch box

And they’re super quick to make – no stovetop cooking or making layers. Just melt, mix, press, and chill. Mixing together the chocolate and peanut butter makes this a fast recipe! 

With just four ingredients, 5 minutes of prep and 10 minutes of setting time, you’ll have a tray of chocolatey, nutty, crispy goodness ready to slice and enjoy. They’re a perfect recipe for getting kids involved in the kitchen.

Ingredients in Chocolate Peanut Butter Rice Crispy Bars 

Here’s all you need to make these chocolate peanut butter bars: 

Peanut butter – I use regular crunchy peanut butter for a bit of texture, but smooth works just as well. Choose a commercial spread for the most consistent results. 

Dark or semi-sweet chocolate baking melts – Australian dark chocolate (around 45% cacao) is equivalent to US semi-sweet. Use melts for convenience, or chop a block into small pieces before melting. 

Butter – Adds richness and helps the bars hold together.  

Puffed rice cereal – Rice Bubbles (Australia) or Rice Krispies (US) give that perfect light crunch.

How to make these Chocolate Peanut Butter Bars

You’ll love how simple these 4-ingredient chocolate peanut butter bars are! Here’s a quick summary.

Step 1: Prepare a baking tray by lining it with baking paper/parchment paper. 

Step 2: Melt the chocolate and butter in a microwave-safe bowl, by heating it in 20 second bursts in the microwave. Stir after each burst until smooth.

Step 4: Add the puffed rice. Stir it quickly and evenly so that all the cereal is coated.

Step 5: Press and chill. Transfer the mixture to the lined tray, press it down firmly with a spatula, and refrigerate for about 30 minutes before slicing into bars or squares.

Thermomixer? You can absolutely make these bars in your machine, but in my opinion it’s easier to mix by hand in a bowl. If using your Thermomix, prepare the tray by lining it with baking paper. In the mixing bowl, melt the chocolate and butter. Add peanut butter and mix. Add the puffed rice and mix on reverse until the cereal is coated. Press into the prepared tray and chill


Tips for success

  • Press the mixture firmly into the tray so the bars hold together when sliced. 
  • The better quality the chocolate, the more it will hold together too.
  • For a neater and more even cut, slice with a hot knife (just run it under hot water and dry it before cutting). 

How much do you love peanut butter? 

I think this recipe is perfect for kids – chocolatey, with the right hint of peanut butter.

I have recipe-tested it with double the amount of peanut butter (so 1/2 cup). It’s just as delicious, but the more peanut butter added, the saltier it becomes. My husband loved it – he’s a big peanut butter fan! But my kids preferred the recipe with 1/4 cup peanut butter.

Storing

These bars keep well in an airtight container in the fridge for up to 1 week.  

You can also freeze them for up to 3 months. They’re perfect for grabbing and popping into a lunch box, where they’ll be defrosted by morning tea.

  • 80 g butter unsalted
  • 225 g dark/semi-sweet chocolate baking melts (Note 1)
  • 1/4 cup peanut butter (Note 2)
  • 3 cups puffed rice cereal e.g. Rice Bubbles/Rice Krispies (Note 3)

Instructions

  • Line a square baking tray (24 cm/10 inch) with baking paper/parchment paper.
  • Put 80 g butter and 225 g dark/semi-sweet chocolate baking melts into a microwave safe bowl. Microwave in 20 second bursts, stirring each time until the chocolate is melted and combined with the butter.
  • Add 1/4 cup peanut butter and stir well to combine.
  • Add 3 cups puffed rice cereal and stir well to combine. Moving quickly, transfer the mixture to the baking tray. Use a spatula to press the mixture firmly and evenly into the tray.
  • Refrigerate for 30 minutes until set. Remove from the tray and slice into bars or squares of your preferred size.

Thermomix instructions

  • Line a square baking tray (24 cm/10 inch) with baking paper/parchment paper.
  • Put 80 g butter and 225 g dark/semi-sweet chocolate baking melts into the mixing bowl and melt for 2-4 minutes, 50°C, speed 2, MC on. Stop halfway, scrape down sides with a spatula, and continue until completely melted and smooth.
  • Add 1/4 cup peanut butter and mix for 10 seconds, speed 3, MC on.
  • Add 3 cups puffed rice cereal and mix 15 seconds, reverse, speed 2, MC on. Scrape down the bowl and repeat if needed. Moving quickly, transfer the mixture to the baking tray. Use a spatula to press the mixture firmly and evenly into the tray.
  • Refrigerate for 30 minutes until set. Remove from the tray and slice into bars or squares of your preferred size.

Recipe Notes

1. Chocolate – Australian dark chocolate is equivalent to semi-sweet baking chocolate in the US (approx. 45% cacao). Melts (small discs of chocolate) are readily available in Australia. If you use a block of chocolate, chop it into small pieces before melting.  
2. Peanut Butter – Use regular commercial peanut butter spread, like Bega. I’ve tested this recipe with our favourite, crunchy peanut butter, but smooth peanut butter will work just as well.  
3. Puffed rice – This recipe uses puffed rice cereal like Rice Bubbles (Australia) or Rice Krispies (US).  
4. Storage – Store for up to 1 week in the fridge. Freeze for up to 3 months.
